Cinnamon Swirl Pancakes

Ingredients
Batter
- 1 ½ cups all-purpose flour
- 1 tbsp baking powder
- 3 tbsp granulated sugar
- ¼ tsp salt
- 1 egg
- 1 cup milk
- 1 tsp pure vanilla extract
Cinnamon Filling
- 6 tbsp unsalted butter, melted
- ¾ cup brown sugar, packed
- 1 ½ tbsp ground cinnamon
Glaze
- ¼ cup unsalted butter, room temperature
- 2 oz cream cheese, room temperature
- ¾ cup powdered sugar
- ½ tsp pure vanilla extract
- 2-3 tbsp milk
Instructions
- Make Batter: Whisk together flour, baking powder, sugar, & salt. Add the egg, milk, & vanilla. Mix until fully blended.
- Make Filling: Combine melted butter, brown sugar, & cinnamon. Mix well. Transfer to a small resealable plastic bag & set aside.
- Make Glaze: Beat together the butter & cream cheese until smooth and creamy. Add powdered sugar & mix until combined. Add vanilla & milk. Add enough milk to thin the glaze to your desired consistency. Set aside.
- Preheat a large skillet to medium-low heat. Spray with pan spray & wipe away excess. Pour ¼ cup batter onto the griddle.
- Snip the corner of the filling bag & pipe a swirl into the center of each pancake.
- When the batter begins to bubble, flip the pancake & cook for 1-2 minutes or until the bottom side is golden brown. Keep pancakes low in the oven while preparing the rest.
- Drizzle cream cheese glaze over the warm pancakes & serve.
