Cinnamon Swirl Pancakes

Ingredients

Batter

  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp granulated sugar
  • ¼ tsp salt
  • 1 egg
  • 1 cup milk
  • 1 tsp pure vanilla extract

Cinnamon Filling

  • 6 tbsp unsalted butter, melted
  • ¾ cup brown sugar, packed
  • 1 ½ tbsp ground cinnamon

Glaze

  • ¼ cup unsalted butter, room temperature
  • 2 oz cream cheese, room temperature
  • ¾ cup powdered sugar
  • ½ tsp pure vanilla extract
  • 2-3 tbsp milk

Instructions

  1. Make Batter: Whisk together flour, baking powder, sugar, & salt. Add the egg, milk, & vanilla. Mix until fully blended.
  2. Make Filling: Combine melted butter, brown sugar, & cinnamon. Mix well. Transfer to a small resealable plastic bag & set aside.
  3. Make Glaze: Beat together the butter & cream cheese until smooth and creamy. Add powdered sugar & mix until combined. Add vanilla & milk. Add enough milk to thin the glaze to your desired consistency. Set aside.
  4. Preheat a large skillet to medium-low heat. Spray with pan spray & wipe away excess. Pour ¼ cup batter onto the griddle.
  5. Snip the corner of the filling bag & pipe a swirl into the center of each pancake.
  6. When the batter begins to bubble, flip the pancake & cook for 1-2 minutes or until the bottom side is golden brown. Keep pancakes low in the oven while preparing the rest.
  7. Drizzle cream cheese glaze over the warm pancakes & serve.
