Salsa Chicken

Ingredients:
- 2 large boneless skinless chicken breasts
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- Salt & pepper (to taste)
- Flour (for dredging)
- 1 tablespoon butter
- 1 tablespoon olive oil
- ¼ cup chicken broth
- 1 (14.5 ounce) jar salsa (use your favorite kind)
- 1 cup shredded Mexican cheese blend
- Fresh cilantro, chopped (to taste, optional)
Instructions:
- Preheat Oven: Preheat the oven to 400°F and move the rack to the middle position.
- Prepare Chicken: Cut the chicken in half lengthwise to create 4 thinner cutlets. Sprinkle the chicken pieces with garlic powder, chili powder, salt & pepper, then coat them in flour.
- Sear Chicken: Add butter and oil to an oven-proof skillet over medium-high heat. Once the pan is hot, sear the chicken for 3-4 minutes per side until lightly golden. Remove chicken from the pan and set aside.
- Prepare Sauce: Add chicken broth to the pan and scrape up any brown bits. Stir in the salsa.
- Combine: Return the chicken to the pan and let the sauce start to bubble. Spoon some salsa over the chicken and sprinkle with cheese.
- Bake: Place the skillet in the oven and bake for 5-7 minutes, until the chicken is fully cooked and the cheese is melted. Optional: Broil for a couple of minutes for a golden, bubbly cheese topping (watch carefully).
- Serve: Garnish with fresh chopped cilantro if desired. Season with additional salt & pepper as needed.
